Ingredients:
-1 tablespoon olive oil
-1 clove garlic
-1lb of lean turkey (ground beef or sausage would also work)
-1 cup shredded mozzarella cheese
-1/2 cup low-carb pizza sauce
-1 cup cheddar cheese
-1/4 cup sliced pepperoni
-1 tablespoon Italian seasonings
– Salt and pepper to taste
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a non-stick skillet over medium heat, add your olive oil and once warm add the garlic and cook until fragrant. Add the ground turkey (or meat of choice) and cook until completely cooked through. Stir through the Italian seasonings
3. Remove the skillet from heat. Stir the cheddar cheese and mix thoroughly to form the base of the “pizza”. (Do not omit the cheese as this helps hold the “crust” together)
4. Spread the low-carb pizza sauce over the cheese crust, leaving a small border around the edges.
5. Arrange the pepperoni and desired toppings on top of the cheese and sauce.
6. Add the mozzarella cheese on top
7. Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and the toppings are heated through.
